After graduating college in 2003 from the University of Denver, Cara began her culinary career at the New England Culinary Institute in Vermont. Originally born in Philadelphia but grew up in Santa Fe, New Mexico, she developed a love of cooking with family, and a love of cooking with culture and tradition. Culinary education provided her with knowledge of food, service and a strong base for learning new techniques in the constantly evolving restaurant industry. During her ten years cooking from coast to coast, Cara was a part of two James Beard Award winning kitchens working under Eric Ziebold at Citizen in Washington DC, and Jason Wilson at Crush in Seattle. Through Chef Eric and Chef Jason’s mentoring, she was able to travel and cook in Japan, and cook at the Pebble Beach Food and Wine Festival. After working through the ranks in these restaurants, she found herself in management roles as Sous Chef, which gave her the passion and craving to build her own business and put her roots down in beautiful Avon, Colorado. At Boxcar, she continues her pursuit of innovative cooking with local and seasonal ingredients in the comfort of the mountains. She believes in new and interesting experiences in life and in food hoping to bring her own tradition and style to the valley.
