The Taste of Vail is the nation's premier spring food and wine festival, held at several venues throughout North America's No. 1 mountain resort. Bodega Los Aljibes is more than just a winery. It is its own world. At their amazing 1,900 acre estate, they have a black-coated pure Spanish horse stud farm, more than 120 acres are dedicated to olive groves, and more than 550 acres dedicated to vineyards where they grow more than 14 different varieties for both commercial and experimental use. There are also 290 acres of beautiful countryside, and still more dedicated to the cultivation of different grains. The estate is located in Chinchilla de Montearagón, at more than 2,900 ft. The climate is very brutal with hot dry summers and bitterly cold winters. The soils are poor and not very deep, perfect to make the vines produce the best quality grapes. Los Aljibes makes 300,000 bottles a year.
