Chef Josh was creating his own websites and graphics by age 11 and was going to pursue a career as a computer programmer and web developer. In order to buy a new computer for himself, he took a job as a dishwasher at the local family restaurant. The rest is history, he was quickly promoted to pizza and sandwich cook, and then to the hotline, he was destined to become a chef. Although he didn’t realize it at the time, his father's great passion for food and desire to become a chef himself paved his path. In Savannah, Georgia, the Monopoli family ate fresh meals at home and rarely went out to eat. Two weeks after he graduated high school he moved to Atlanta to work and go to school. Josh attended Le Cordon Bleu and work at notable restaurants such as Restaurant Eugene and Holeman & Finch. In 2012 he moved to Boulder, Colorado and worked as Chef de Cuisine of Black Cat and Bramble & Hare. His next venture was to open BRU where he and his partner received best brewpub by Denver Westword in their first year. Josh then moved to Denver to work at the Squeaky Bean and Old Major before he accepted the Sous Chef position at Mountain Standard in Vail. It wasn't long before the mountain lifestyle won him over! He now enjoys snowboarding, hiking, and whitewater kayaking. Today, as Chef de Cuisine, he leads the talented Mountain Standard kitchen and wows the guests with his delicious creations using fresh ingredients and the wood burning grill. In his off time and for fun, he can be found experimenting with food and fermentation, making vinegar from scratch, and taking long walks on the beach. Josh is currently preparing for his next BIG adventure of fatherhood! He will be welcoming his first son in May.
