This Paso Robles Cabernet Sauvignon showcases a deep ruby/purple core with shaved cocoa, black fruit, cinnamon, and sweet tobacco aromas. The mouthfeel has great density and polish in the texture with incredible length. The 2021 vintage is a rare mix of boldness and finesse. Hand-harvested at night to ensure cool temperatures, we cold soak the berriesto draw color and develop flavors while elevating structure.Fermented in stainless steel tanks, then aged in French oak barrels, 75% new for 14 months, the wine is bottled unfined and unfiltered.

Fermented in open-top stainless steel tanks, then aged in French oak barrels, 50% new, for 16 months, the wine is bottled unfined and unfiltered. Showing dark, almost opaque edges with gorgeous notes of blackberry fruit, sage, black olive and shaved cocoa. The mouthfeel has a decadent richness and textural quality with a long and delicious finish. Both dense and flecked with acidity, the wine shows equal parts power and grace.

The 2023 Sauvignon Blanc is a great example of the variety and has a bright, racy style as well as textbook lemon and lime fruit, some minty herb nuances, medium-bodied richness, and good overall concentration. It's going to be incredibly versatile on the dinner table. The wine was fermented in new and used French oak barrels and concrete eggs, aged sur lie and bottled in October, 2024.
