Born and raised on a hobby farm in rural Minnesota, John Zavoral grew up cultivating crops and raising animals—an early connection to food that shaped his culinary journey. After high school, he attended Le Cordon Bleu Minneapolis/St. Paul before moving to Colorado in 2006 for an externship at the former Wildflower at the Lodge at Vail. With a deep-rooted love for Italian cuisine, Chef John has honed his skills at some of the Vail Valley’s most renowned restaurants, including Cucina Rustica, Campo di Fiori, La Nonna, and most recently, a four-year tenure as Executive Chef at Toscanini Ristorante. His passion for **fresh pasta—both making and eating—**has become a defining element of his culinary style. Committed to his roots, Chef John actively connects with local growers and producers, understanding firsthand the dedication it takes to cultivate quality ingredients. He prioritizes seasonal sourcing and freshness, ensuring that every dish reflects the best of what’s available.
